1983

Il Pastaio was founded in 1983 and started out as a small, artisanal workshop producing fresh egg pasta in Villafranca, not far from Verona. Production was carried out on a small scale and sales were generally limited to the local area.
Since then, many things have changed and that small workshop has grown into a company with two production plants that nonetheless still maintains its passion and commitment to producing an artisanal product.

2016

At present there are 7 production lines at Armando De Angelis that produce filled and unfilled pasta and gluten free pasta.
We currently produce more than 30 different types of products maintaining consistent levels of quality from the dough, to the choice of ingredients to the production process. Armando De Angelis respects the original recipes but as a real “artisan of flavour” adds a personal touch and thus creates a unique and unmistakable product.

The eggs that we use come from free range breeders where chickens are free to lay eggs in their nests.

BRONZE DRAWN

Water, eggs and flour are transformed into a wide variety of pasta shapes thanks to the use of bronze drawing techniques. The dough is squeezed through a mould in the shape required and then it is cut into different lengths thus giving shape to the pasta.
The technique of bronze-drawing creates a rough, porous surface on the pasta allowing it to absorb sauce perfectly.
All pasta by Armando De Angelis is made using this bronze-drawing technique and then is dried slowly at low temperatures in order to enhance the flavours of the high quality ingredients and 100% Italian grains used by the company.
